Roasted eggplant, zucchini & red pepper, herb lemon & Parmesan ricotta, Buffalo mozzarella, fresh basil, in a rosé sauce. (550g)

Preheat oven to 350F, cook 45 minutes with the lid on, then 15-20 minutes with the lid off until cooked through, and crisped on top.
